What began as a single malt spirit, distilled in copper pots using Whistler's local glacier water from Rainbow Mountain, the spirit has patiently endured the test of time. Barrel-aged in small batches, hibernating from season to season in Whistler's unique climate-it's finally earned the honour to be called Whisky. The result is bold flavours of a freshly charred oak barrel that has developed with time, adding character, depth, and complexity to our Whistler Whisky. Each barrel offering subtle unique notes that are reflected within each batch. Whether you drink it neat, on the rocks, or in a cocktail, we highly recommend savouring the moment with each sip-because in time, it may never be the same again.
100% Island grown barley, fermented with a fruity Belgian yeast strain, and double pot distilled before aging over 6 years in a French Oak, Blackberry Port barrel previously holding our ‘Sang du Merle’ Sour Ale aged on black currants. The result is our fruitiest Whisky yet, balanced by the richness of the Vancouver Island Malt. The nose explodes with fresh aromas of raspberry, grape and apricot, evolving into a sweet, mellow finish.
Made from 67% Island grown & malted barley and 33% Hard Red Wheat from Field 5 Farms. Fermented with a French Saison yeast strain, and double pot distilled before aging over 4 years in a French Oak barrel previously holding our Kiwi Saison Ale. The locally grown White Wheat creates a smooth, gentle palate with soft notes of cotton candy, honey and vanilla ice cream. Though slightly less spicy then our previous 100% malt releases, this Whisky maintains the deep toasted oak, vanilla and toffee characteristic of our unique barreling process.
Our 2025 release is incredibly limited—only one cask is ready, yielding just 350 bottles! After 6.5 years of aging, we’ve lost a whopping 39% to the “angel’s share”. With a mash bill of 51% corn, 22% malted barley, and 27% rye, this whisky is bottled at a smooth 46% ABV. It’s priced at 73,91 plus taxes.

From the Single Malt Infusion Series, we took our 3 year old small batch whisky and aged it on Columbian cacao nibs. The result is rich and dark chocolatey notes, but not too sweet. A bit about Level Ground: “We partner with progressive co-ops who are focused on coffee quality, environmental sustainability and fair income for farmers. Everything we do is fair trade and organic.”

Back in 2017 at the Roots and Wings Distillery, we set aside some pure corn spirit in a new charred barrel and waited for it to mature into a handsome young bourbon style spirit. Johnny Handsome is ready to come out to play. Unveiled on November 22, 2019, he is rough around the edges but deeply refined kind of spirit with the soul of a centenarian but the body of a barrel-chested Viking that will knock you off your feet.
