From the Single Malt Infusion Series, we took our 3 year old small batch whisky and aged it on Columbian cacao nibs. The result is rich and dark chocolatey notes, but not too sweet. One of North America’s original distilled spirits, we wild fermented locally grown apples from Junction Cidery and double Pot distilled it with our secret spice blend. Aged in American Bourbon barrels, resulting in a sweet sipper with notes of orange, burnt caramel, vanilla bean, stewed prunes, cinnamon, and grains of paradise
Our Orange Vodka is double distilled in small batches and cold filtered 6 times on our 500L Polish still. Made from locally grown barley & wheat from Field Five Farm. Finished with Curaçao orange peel.
40% ABV. Our traditional dry gin made from locally grown soft white wheat and barley from Field Five Farm, finished with BC grown blueberries and a hint of Mexican vanilla.
Our Gin is triple distilled in small batches on our 30L copper still. Made from locally grown soft white wheat and barley from Field Five Farms. Island Grown Gin is a traditional dry gin emphasizing BC grown Juniper Berries and locally foraged botanicals; perfect for cocktails or martinis.
40% ABV. The Island Grown Vodka features notes of aniseed, black pepper, and lemon representing the terroir of the island. Island Grown Vodka took home GOLD with Distinction in the Contemporary Vodka category in the Canadian Artisanal Distilling Awards 2023. Island Grown Vodka is made with 100% local malt from Field Five Farm, located only 20 km away from this Victoria Distillery. Clay used 70% Field Five Farm white wheat malt, and 30% Field Five Farm Pilsner malt to create this Vodka.
100% Island grown barley, fermented with a fruity Belgian yeast strain, and double pot distilled before aging over 6 years in a French Oak, Blackberry Port barrel previously holding our ‘Sang du Merle’ Sour Ale aged on black currants. The result is our fruitiest Whisky yet, balanced by the richness of the Vancouver Island Malt. The nose explodes with fresh aromas of raspberry, grape and apricot, evolving into a sweet, mellow finish.
Made from 67% Island grown & malted barley and 33% Hard Red Wheat from Field 5 Farms. Fermented with a French Saison yeast strain, and double pot distilled before aging over 4 years in a French Oak barrel previously holding our Kiwi Saison Ale. The locally grown White Wheat creates a smooth, gentle palate with soft notes of cotton candy, honey and vanilla ice cream. Though slightly less spicy then our previous 100% malt releases, this Whisky maintains the deep toasted oak, vanilla and toffee characteristic of our unique barreling process.
Clay has blended Moon Distillery Vodka, espresso, sugar, almonds, cocoa nibs, and Vanilla.Moon Distillery was the first Distillery in Canada to create a pre-packaged Shaft, and its been the best seller from the Distillery ever since.
