Jason’s passion for whisky lies in the journey from grain to glass, where slow craftsmanship and traditional methods shape its character. This approach results in a whisky that beautifully marries natural elements with the artistry of its maker. Crafted in Sooke, British Columbia, using BC grain, this whisky’s mash bill of rye, wheat, and malted barley is distilled in small batches and aged for at least three years in new American white oak barrels. Its robust, full-bodied flavor profile is enhanced by the use of new American oak and a genuine love for whisky-making. Made in the spirit of romance, Jason and Alayne wanted a special, decadent dark chocolate sipper, perfect for extra sweet moments with the ones they love. We teamed up with Sirene Chocolate, artisan chocolate makers from Victoria, B.C., to produce a dark chocolate-lover’s dream: Sirene Chocolate Liqueur. Using the byproducts of their production process—the shells and husks of cacao beans that have been ethically grown and sourced—we extract the raw characteristics of the cacao. The final result is a beautifully layered experience, allowing you to taste notes of fruit, citrus, fudge, and leather, ever so lightly back-sweetened. A perfect liqueur to sip on its own, it’s equally enjoyable in a cocktail.
The idea of creating a coffee liqueur came to life after one of Jason’s usual morning strolls for coffee, with the aroma of roasting beans inspiring his vision for the flavor profile. Born out of our love for all things java, this liqueur is made from premium coffee beans roasted by our favorite neighborhood café, The Stick in the Mud. The distillation process extracts the complexities of the coffee beans and transforms those flavors into a well-balanced, semi-sweet liqueur that’s ideal for any time of day. Our Fresh Lemon Liqueur was born when Jason dreamt up a drink that was light, refreshingly delicious, and easy to shake up. Made with a gin base specifically crafted to pair with the juice of delectable, premium lemons, this liqueur exemplifies simplicity at its finest. The fresh, tart notes of the lemon are gently sweetened to create a spirit that is 100% Sheringham. Enjoy this liqueur in a simple cocktail or on its own, shaken over ice. Jason has fond memories of cooking with rhubarb over the years, especially compote made with rhubarb freshly harvested from his garden. Drawn to the winning combination of rhubarb and star anise, he envisioned a liqueur that would taste as fresh and bright as a new summer’s day. With its classic gin base, premium rhubarb grown in British Columbia, and maceration process involving star anise and lemon skins, this liqueur achieves a perfect balance of tart, sweet, and subtly vegetal notes. A year-round delight, this liqueur is great on its own for sipping and equally enjoyable in a simple cocktail—just add ice and bubbles.
If it’s simple, then it must be fine-tuned for greatness. Pacific Vodka is the base of our white spirits, presenting the perfect canvas for creativity. With its clear, notably smooth texture, soft flavors, and clean, warm finish, this vodka both makes an exemplary sipping spirit and an excellent cocktail ingredient. Retaining the sweetness and peppery notes of its base grain, this is vodka at its best.
With a shared love for festivities and celebrations, experience our Pacific Northwest approach to a centuries-old Nordic tradition. Jason began by tasting widely, developing the profile he wanted to express in the spirit, and then formulating a recipe for distillation. Our Akvavit includes notes of dill, caraway, anise, citrus, and local, sustainably-harvested winged kelp, which provides a tantalizing hint of the ocean and captures the taste of our region. Akvavit is traditionally served chilled as a sipper. We love it as a sub for gin in many of our favorite cocktails.
On a visit to London, UK, Alayne and Jason spent a rainy walk back to their hotel discussing all of the local gins they had tasted. Feeling inspired to experiment with this classic spirit, Jason began cataloging flavors to create his own version of a London Dry gin—a classic gin with a Sheringham-edge. With a balanced bouquet of bright juniper and citrus, Sheringham’s London Dry Gin offers a luxurious mouthfeel with smooth edges, leaving the palate with a crisp and dry sensation and a faint trace of spice. Beautiful in its simplicity, this gin doesn’t need much to shine. Raincoast Gin was inspired by the fresh rainfall that feeds the lush temperate rainforest and is expressed through coastal botanicals, traditional juniper, and citrus. Raincoast is a bright and balanced approachable gin, presenting subtle impressions of the west coast through notes of nettle and oakmoss. This gin is elegant on its own, in a classic martini, and brilliantly nuanced in a Sheringham cocktail.
Formerly Kazuki Gin, “Beacon” embodies a sense of place, signifying two monumental sites on Vancouver Island where Sheringham Distillery originated–the iconic Sheringham Point Lighthouse beacon located by our first distillery and the beloved springtime cherry blossom-lined Beacon Hill Park. Brilliant floral and fruitiness of the cherry blossoms deliver polished and rounded edges with soft citrus notes of yuzu and grapefruit, and local green tea leaves and flowers give a delicate herbaceous note through to the finish. Beacon Gin is elegant on its own and brilliantly nuanced in a Sheringham cocktail.
