Nocino is a traditional Italian liqueur made from unripe green walnuts, typically harvested around late June, and steeped in alcohol with a blend of spices. The resulting liqueur is characterized by its rich, dark brown color and complex, bittersweet flavor profile.

Unruly Gin starts life as 100% pure BC Honey. Jason has fond memories of cooking with rhubarb over the years, especially compote made with rhubarb freshly harvested from his garden. Drawn to the winning combination of rhubarb and star anise, he envisioned a liqueur that would taste as fresh and bright as a new summer’s day. With its classic gin base, premium rhubarb grown in British Columbia, and maceration process involving star anise and lemon skins, this liqueur achieves a perfect balance of tart, sweet, and subtly vegetal notes. A year-round delight, this liqueur is great on its own for sipping and equally enjoyable in a simple cocktail—just add ice and bubbles.
Made from 67% Island grown & malted barley and 33% Hard Red Wheat from Field 5 Farms. Fermented with a French Saison yeast strain, and double pot distilled before aging over 4 years in a French Oak barrel previously holding our Kiwi Saison Ale. The locally grown White Wheat creates a smooth, gentle palate with soft notes of cotton candy, honey and vanilla ice cream. Back in 2017 at the Roots and Wings Distillery, we set aside some pure corn spirit in a new charred barrel and waited for it to mature into a handsome young bourbon style spirit.
