Nocino is a traditional Italian liqueur made from unripe green walnuts, typically harvested around late June, and steeped in alcohol with a blend of spices. The resulting liqueur is characterized by its rich, dark brown color and complex, bittersweet flavor profile.

There's a reason people wait all year to get their hands on this limited edition liqueur. We harvest green walnuts at the height of summer, steep them in our pure spirit, and then spice it with lemon peel, cinnamon, and allspice. That gets sweetened with local honey, and creates the perfect tipple for winter.

Unruly Gin starts life as 100% pure BC Honey. We gently ferment our honey into mead and distill that mead to spirit using custom designed stills to separate out the harsh heads and the oily tails, ensuring that only the softest and sweetest hearts are ever collected. We then distill those hearts one final time, using vapour infusion to capture the delicate and bright aromas of our unique blend of locally sourced and organic botanicals.

This current batch of whisky is named Nancy after everyone's favourite teenage sleuth. She's a 50/50 rye/wheat combo and has the perfect mix of spice, bite and drinkability.

Jason has fond memories of cooking with rhubarb over the years, especially compote made with rhubarb freshly harvested from his garden. Drawn to the winning combination of rhubarb and star anise, he envisioned a liqueur that would taste as fresh and bright as a new summer’s day. With its classic gin base, premium rhubarb grown in British Columbia, and maceration process involving star anise and lemon skins, this liqueur achieves a perfect balance of tart, sweet, and subtly vegetal notes. A year-round delight, this liqueur is great on its own for sipping and equally enjoyable in a simple cocktail—just add ice and bubbles.

Made from 67% Island grown & malted barley and 33% Hard Red Wheat from Field 5 Farms. Fermented with a French Saison yeast strain, and double pot distilled before aging over 4 years in a French Oak barrel previously holding our Kiwi Saison Ale. The locally grown White Wheat creates a smooth, gentle palate with soft notes of cotton candy, honey and vanilla ice cream. Though slightly less spicy then our previous 100% malt releases, this Whisky maintains the deep toasted oak, vanilla and toffee characteristic of our unique barreling process.

On a visit to London, UK, Alayne and Jason spent a rainy walk back to their hotel discussing all of the local gins they had tasted. Feeling inspired to experiment with this classic spirit, Jason began cataloging flavors to create his own version of a London Dry gin—a classic gin with a Sheringham-edge. With a balanced bouquet of bright juniper and citrus, Sheringham’s London Dry Gin offers a luxurious mouthfeel with smooth edges, leaving the palate with a crisp and dry sensation and a faint trace of spice. Back in 2017 at the Roots and Wings Distillery, we set aside some pure corn spirit in a new charred barrel and waited for it to mature into a handsome young bourbon style spirit. Johnny Handsome is ready to come out to play. Unveiled on November 22, 2019, he is rough around the edges but deeply refined kind of spirit with the soul of a centenarian but the body of a barrel-chested Viking that will knock you off your feet.
