Jason has fond memories of cooking with rhubarb over the years, especially compote made with rhubarb freshly harvested from his garden. Baijiu (say By-jew) is Chinese hard liquor. The distilling process is similar to making whiskey. Baijiu was traditionally aged in clay jars that were buried underground. It is clear and colourless and has a smooth flavour, a mild, pleasant aroma and a nice finish. Dragon Mist Baijiu is made using a traditional Chinese technique with wheat grown in Dawson Creek, BC and pure, clear Canadian glacial water – that’s all – no other additives or neutral grain spirits from other sources.

Named after Barrett Montfort, the founder of the Shelter Point farm, Montfort is a special field-to-flask whisky. This whisky literally has its roots in this beautiful land. Each of the fields on the farm have specific soil classifications and different proximities to the sea and the forests.
